A long sentence cannot always fit as a large readable composition. Split at a meaningful phrase boundary rather than squeezing every word into one frame.

Shorten the grouping before shrinking the type
For “Three mistakes to avoid”, keep the promise together. For a longer explanation, change to a smaller caption treatment instead of making every word equally dominant.
Give the eye something stable
Allow the viewer to read the complete thought before the next scene takes over. Listen to the natural pauses and inspect whether important words remain visible long enough.
Keep essential imagery uncovered. If the video demonstrates a product or a technique, the words should not hide the thing being explained.

Can I use big text for every line?
